Have you already seen our documentation on using the default CSV importer here: Product CSV Importer and Exporter?

If you haven’t, there’s a section there on Converting an existing simple product to a variable product that you might want to look at.

Easiest way would be to create a product with variations and export it – that way you will see exactly how the CSV is formatted!

I second what @seank123 suggested, and it is what we typically recommend.
