Proper way to convert Simple product to Variable

Hi,

What would be a proper way to convert Simple products into Variable products during the import (custom code) using WC API (native functions)?

Use case:
Product is imported through API and since it doesn’t have any variations, it’s marked as Simple product – it just has one size and one color.
Then at some point, variations (multiple color and size combinations) appear in the API and we would convert that product into Variable and add variations.

Or is it reasonable to create Variable product initially even if it only has one size and one color?
