    It would be nice to the see the option of switching between PX, and % (percent) controls for columns. This way I can choose how to space my columns regardless of the layout I choose from the template list.

    The only way I see to do this now, is to select 60/30 or 30/60 column layout for percentage scaling and then altering the columns including adding and subtracting

    If I want to use PX measurement, I have to pick from one of the remaining column layouts.

    If there is a way around this behavior, please let me know.

    The function you describe is a function that would have to be added in the Block Editor first. My recommendation would be that you contact the Gutenberg developers. In their github repository there is already a rather inactive issue for this case: https://github.com/WordPress/gutenberg/issues/42575 – maybe your participation in the form of your wish would give this addition some push.
