Quotes in mail headers

Hi,
in these headers:

From: "name" <[email protected]>
To: "name" <[email protected]>
Reply-To: "name" <[email protected]>

I want to realibly have quotes around names but I end up only with:
1) Name without quotes: name <[email protected]>
2) Name with duplicate quotes: "\"name\"" <[email protected]>
I can see it in the e-mail source in Thunderbird.
