How can I make this shortcode display one actual random product with every page refresh.

The shortcode uses the standard WordPress WP_Query
orderbyandrandparameters.https://codex.www.ads-software.com/Class_Reference/WP_Query#Order_.26_Orderby_Parameters

You may have to code a custom solution if the standard WordPress query randomization functionality is not enough for you.
