Received Inquiry NOT showing Email of Sender

I’ve never encountered something like this before and need some help. I set up CF7 for a client site as shown below:
From: [your-name] <[email]>
Subject: Inquiry from Tea-Biotics.comMy client received an inquiry from this form – when it came to them, it did NOT show the senders email (it’s required and won’t submit without it being entered). It does show the name though.
I have added a reply-to to the additional headers field box, but the client has an email that has no return email address and cannot respond to this client.
I’d like to know why the [email] is not showing up on the sent form.
I’d also like to know if there is anywhere I could find a copy of the submitted form to retrieve the sender’s email (I did not have Flamingo installed at the time)?
