Recommend WooCommerce plugin for made-to-order items

Hello,

I see many plugin extensions for Woo but am having a hard time taking it all in. Can anyone recommend a plugin(s) that will do the following:

? Show that an item isn’t in stock, so much as it’s made to order. Looking for something that doesn’t show a number in stock or out of stock. I make it when it’s ordered. I could put it in the description but wonder if there’s something that add functionality to the availability list.

? Offer me custom choices such as, “Ships within 7-10 days” on these custom orders.
