I would like to change my permalinks from:
    lifesyling.com/%year%/%monthnum%/%day%/%postname%/
to /%category%/%year%/%monthnum%/%postname%/ so that I can easily sort my content by category in Google Analytics.

I’m aware I need to use regular expressions in the redirection plugin, but I don’t know how to convert from the above to a regex. I have read some of your other support threads but I’m not following (the best I found is this: https://redirection.me/support/redirect-regular-expressions/) but I’m unsure how to turn it correctly into source and target.

The page I need help with: [log in to see the link]

It’s not possible to perform that particular change as the category does not exist in the original URL. Instead you will need to create a redirect for each post.

ah ok thanks. Is there a way in the plugin to generate a list of all my post URLs so that I can edit them first in a spreadsheet and import them as csv all in one go?

There isn’t a way to do that with the plugin. You may find another plugin that can do it, or you may be able to use WP CLI
