Regenerate how many image sizes?

Hi I am about to re-work two sites with lots of images that needs to first be regenerated, before starting to also use retina on them. I am super excited to have found all your plugins!
My images is not huge today and I want to follow your advice, to not make too many and too big files. But I′m stuck at the basics…WP Media settings for Large is by default 1024. One of my sites has a content area of around 1000px, so I guess 1024 will work well for that. And I guess I will need Medium-Large 768 to be used from srcset, on smaller screens like tablets?
So I guess I should upload files that is 2048 to be able to make retina images for both those sizes? (And Medium.)But my other site has a content area of only around 700px. That is smaller than the default Medium-Large (768). How to handle that?
Should I still use and regenerate a Large that is 1024 px, or will that size never be used on any device when content width is only 700 on desktop?
But to be able to insert images into the content I still need to have a “Large” size, otherwise there would only be Medium and Thumb to choose from… So should I set Large to be 700? That seems strange.
Maybe still upload files to match the Medium-Large retina, (2×768=1536), just in case that size might be used on tablets/mobiles, or in the future… So uploaded files should be 1400-1600? Confused!I will on both sites also have a few page top images of much bigger size (so much bigger full size/retina). I guess I can regenerate them individually/manually.
If you have time to give basic advise of the way to think forward I will be happy!
