Remove “Add to cart” (checkout) icon from header menu

There might be an option to remove this from the main menu in the Customizer, have you checked there yet? If you don’t see anything within the Customizer, you can add the following CSS in Appearance->Customize->Additional CSS to hide it

#menu-primary .current-cart {
    display: none;
}
