Remove certain custom post types?

Try to add this function into the child theme’s functions.php file or you can use the Functionality plugin:

function sydney_child_unregister_theme_post_types() {
    global $wp_post_types;
    foreach( array( 'employees', 'testimonials' ) as $post_type ) {
        if ( isset( $wp_post_types[ $post_type ] ) ) {
            unset( $wp_post_types[ $post_type ] );
        }
    }
}
add_action( 'init', 'sydney_child_unregister_theme_post_types', 20 );
