Our developers have confirmed that the message about payment_method_types in your Stripe dashboard is intentional. It’s used to decide which payment methods your customers can use during checkout. To manage the available payment methods, you can go to the Stripe settings in WooCommerce (Payments > Settings > All payment methods).

Thing is when I add an payment example my product is on USD but I want to use my costumers in Germany and adding SOFORT, than it says that needs to be in EUR currency.

So I have to turn into automatic payments in order to work for all currencies and methods.

As I understand, you would like to keep USD as the currency at your store, while also being able to accept orders (for example, from Germany) via SOFORT in EURO. Correct?

In this case, I recommend replacing the WooCommerce Stripe Payment Gateway, currently in use, with WooCommerce Payments – Fully Integrated Solution Built and Supported by Woo.

Supports both SOFORT, and multicurrency (directly linked here is the related documentation section).
