Replace YouTube videos by thumbnail not working

I’m unable to get the plugin working properly for YouTube embeds or oEmbed. My setup involves:
– WP Rocket (in the Media section I have “LazyLoad” all settings off) – https://d.pr/i/GPkIU9 – issue persists with this on or off
– WP Rocket LazyLoad (I have all settings turned on) – https://d.pr/i/fNJnWr
– I have the Async JavaScript plugin enabled (deferred) – issue persists with this on or off

I see an empty space where the video should be. When I view the source, this is what I see:
