REST API Cache

Hello everybody.
I have an issue with the WP plugin caching the rest API calls. If I activate the REST Cache, all the responses have an error 500 status.
Any clues why this could happen?

I’ve also seen this error at other folks but have seen no response.

I’m running on AWS with latest version of everything, deployed the AWS OLS from the Marketplace.
