    I am helping my sister with her site, and noticed that her version of WordPress is 3.2.1. I would like to update it to the current version (3.5.1.). Is it 100% safe to update it?

    I know that when editing themes, it’s important to set up child themes in order to have safe upgrades to WordPress, but I do not know what her web developer (volunteer) did to create her site and if then, there is any danger to the current state of the site if and when we upgrade WP.

    Any insight or assistance is greatly appreciated.

    Ex: should I back up the site offline before upgrading, and then how do I go about restoring this if need be?

    No matter what the upgrade is you should always backup before you do any backups or major changes. So yes in this case you should definately back up the files and the database.

    If anything does go wrong, you can delete all of the sites files on the server and re-upload them to the same place form your backup, then drop all of the database tables and import your database SQL file.
