Seeing a lot of entries for N/A user?

Looks like perhaps there is some kind of plugin on your site that has created a custom post type called “Submissions”.

Presumably this allows people to submit something from the front-end of the website anonymously (i.e. without a WP user account)?

This is not a problem with Stream, but rather Stream is doing it’s job and letting you know that something is being saved to the database, it’s just that whatever plugin is allowing this is not requiring a user ID or post title before creating a database entry.
