selling things when inventory is ZERO

Hi All, this is maddening. After marking the product inventory to ZERO and making the product post Private. 2 weeks later we have a sale come through. The user says they went to buy (the now sold out tshirts) couldn’t find them, BUT it was in their shopping cart, which was kind enough to take their money. How do i STOP THIS??
