sender info not included on email received

My form was working perfectly but emails now have as the send my own email address ie [email protected] where previously the customer’s email was supplied. This means i can’t reply to the customer.
I made a change a few days ago to the email settings of my site which may have caused this. Instead of mail generated from the site displaying the sender as [email protected] they are now sent as [email protected]. I don’t see how this could have caused the problem but it’s my best guess.
