    When a visitor clicks on the “Read more” link, I understand that the page does not require a refresh to reveal the text which had been hidden. Does that click get recorded as “activity” which is being measured via Google Search Console?

    Read more action uses JavaScript. This means that you can also use it for metrics purposes with the proper customization of index.php file <- just in case you have this in mind.
