Set appointment by service but restrict time by person

I really like the easy appointment plugin (well done). However, I’m wondering if it’s possible to allow people to schedule a service but, when that time slot is confirmed, fill up that slot on the schedule for all other services. For example, I’m using the 2-column layout and the first thing a user is asked is what service they want. Let’s suppose I choose PCR. The only employee they can schedule it with is Paulina. So, if someone chooses 5:30-6pm, I no longer want that time slot to show up, regardless of which service they choose. If someone chooses an antibody test at 5:30pm, to be performed by Paulina, I don’t want that to be possible b/c they already scheduled a PCR test with her at that time. Does that make sense? Is there a simple way of restricting appointments on the calendar by the person even though that person can perform several different services?
