Set categories to only view on Vendor pages

I’m offering a service where school parents (customers) from multiple schools order lunches for their children from multiple vendors.

It’s therefore important that when a customer goes to the Shop page, they don’t see an array of all products (from all vendors) and start ordering. I have categorised school specific products by Tag and set them as sub-menu items under the Shop menu, forcing customers to go to their “school” menu in order to order. Once they have clicked the School Tag menu they should only see products available from vendors associated with their school.

I only want your plugin to sort products by category at this point and not at the Shop page level.

Is this possible or is there a better workaround that I am missing?
