Set default values on [event_form]

Is there a way to set default values on the form tnat comes up when I use the [event_form] shortcode? Even better is there a way to set a value and hide the field from being changed?
Related to this, is there a way to limit the selectable categories on a given page so that one page creates events in one category and another page creates events in a different one?
