Setting all variable products to 0 stock doesn't work

Can you explain what you are seeing and where?

I tested a few values on this bulk stock editor and it works, except for the value 0.

A few scenarios in which setting all to zero is important:
-The products were sold in the physical store.
-The actual stock was miscalculated and there isn’t any more product.
