This looks like a plugin conflict, please check for a plugin conflict by disabling all other plugins except WooCommerce and Variation Swatches and see if the issue is resolved, next, enable the plugins one by one to know which plugin is causing the issue.

Yes, plugin: Variation Swatches for WooCommerce.

In this .gif, which I posted above, it can be seen that I use Cyrillic (Синий|Белый).
I tried using the Latin alphabet for the values of the variants (Blue|White), and it worked.
