1) So, do I need a special plugin to create an additional role for club members?

You can use a plugin to create role based pricing. Here’s a link to one I found:

2) The shipping works per box, so 1 box is say $10 shipping, 2 is $18 etc etc. How would I set that up? Stock standard Woo, or with a plugin?

Thanks. I’ve managed to get the shipping to work.

Now my thinking for the users has changed a bit. On registration, they select a tickbox saying “I want to join the club”, and a unique coupon is created expiring one year from registration.

That coupon can then be applied on checkout if the user buys more than x bottles.

You can add in a registration coupon with a plugin such as this: https://yithemes.com/themes/plugins/yith-woocommerce-coupon-email-system/

You’ll need to set the coupon to have a spend limit instead of a specific number of bottles.
