selecting a different shipping method per product is not currently supported, but it’s on the roadmap.

As for how to do it – considering it’s not even supported at the shipping class level, I would put this on the difficulty level of “near impossible” as it is. You’d have to override or replace a lot of core woocommerce stuff.
