Shipping UK mainland only

Setup a zone for UK:

Then add a flat rate method within it for your shipping cost.

I know how to do that, what I mean is UK mainland, not the whole of the UK. Without the places that are more difficult to reach like Scottish highlands for example.

You should be able to find a list of postcodes for those areas. If you create a second zone with UK and those postcodes, no shipping methods, and above your main UK zone, those areas will not get shipping options.
