I wasn’t suggesting that you deactivate every plugin that wasn’t necessary for the site to run. I was suggesting you deactivate all plugins except WooCommerce.
If it works now, reactivate plugins one-by-one and test to try to identify the one that is causing the problem. Even if that’s an essential plugin, you have the option to double check that that one is up-to-date or contact the author for an update or look for another similar plugin that can do the same thing.
If the shop page still doesn’t work with just WordPress latest, WooCommerce latest and theme latest in play, then this points to a theme problem. Contact the theme author for support, or look for another theme.
Shortcodes don’t have pagination so all your products must fit on one page, but that may not be a problem for your shop.
Its possible the offending theme or plugin will be updated over the next month or so, and as you have a workable site at the moment its ok to wait.
