Shop page and category archives vary in layout

Any idea why the shop page (which is the correct layout): https://www.whatihavelearnedteaching.com/shop/

and the category pages: https://www.whatihavelearnedteaching.com/product-category/math/

have a different grid layout?

All my category pages are wonky. It should be 5 across, but some rows have 3, 2, 1, etc.
