Can you take a look here: https://docs.woocommerce.com/document/template-structure/#section-1 where we talk about how to copy the files so that your edits will be displayed.

Here is an example.

Copy

wp-content/plugins/woocommerce/templates/archive-product.php

to

wp-content/themes/yourtheme/woocommerce/archive-product.php

Have you copied the files in this way?
