Shop page default

I am trying to sort the products that are seen when viewing my shop.
Currently, it is throwing duvets in with the t-shirts. I have tried setting product order and changing the permalink for my shop page to default to men’s, but both options are being overridden by the sorter at the top of the page.

Can you tell me:
1. how to tell that sort by feature to sort by current category, and not pull in all products. Basically I never want to show all products at once. The widget should always be selecting a category by default.
2. how to slip a shop landing page in front of the current shop page where I could direct to specific categories by links and graphics.
