Shop template edits doesn’t override default Woo shop page

I’m following the FSE convention in using the Qoe theme (great work, btw) by editing the templates in the WP Editor of the default pages. However, since seeing that there’s a Shop page as the default in WC for the shop landing page, I edited it in the Pages section of the Editor. Yet, when loading the shop URL, it doesn’t show this page and defaults instead to what seems to be the Product Catalog template. When I try to edit the Shop Page in the WP menu directly, it does show the edits but as a Post instead of a Page content type. Do I have to override the Product Catalog template to apply my changes and if so, why and how do I do this? Thanks!
