I have it installed on my site, but I’m not really sure what it does? Should I remove it? I’m a newbie to WP and it sounds like a tool that might benefit me down the road, but I haven’t heard too many good things about it.

If you’re using WordPress 5.1, you only need the Gutenberg plugin if you want to test experimental editor features.

Some short history, “Gutenberg” was the code name for the new block editor now built into WordPress. Since it’s built in now, the plugin only provides experimental features that may be added to the built-in editor in later releases.

So, unless you like testing experimental features (nothing wrong with that, of course), it’s safe to delete the Gutenberg plugin.
