Show/Hide options based on entries number

Hello,
We are running a training program where students can apply to courses using a form built with VFB. One of the fields is a “Select” type field where students can select one of six date options. My question is it possible to automatically remove an option based on a specific entries number?

For example if 100 student (which is the maximum number of available seats in our classroom) have selected the first option, that option will automatically be removed from the list so that no more students can select that option.

I understand that this probably not available right now but I wonder if there is any way to get around this even if coding is required.
