show subcategories in sidebar but not in pages

I’ve searched for a solution to this but it looks like most people are trying to do the opposite of what I need…
I want to show ALL categories and sub-categories in my sidebar. But when you select a parent category, I only want to see posts from that category and not all the subs as well. Is there a way to do this in WordPress?
