simple shipping implementation

My eyes are glazing over after trying to get an understanding of how to configure shipping. The website in question is dog treat business with four product lines.
1) A dog food supplement sold in 2 pound or 5 pound bags.
2) Soft Jerky treats in a 4 oz package (six flavors).
3) Bulk dog treats (like simple bone biscuits) sold in bulk by the pound
4) Decorated cookies sold individually that look like “people food” (Birthday cake, Snow Man, Cannoli, s’mores, etc.)What is the simplest way to plan out how to handle these things? My head starts to hurt at the part where I’m thinking about what should be accounted for in zones, what should be part of a class (and why classes even matter), how and why I would use Flat Rate shipping, and how all that relates to what is charged by USPS once I have everything in a box.
Is there a simple way to configure this, or do I need to hire an underwriter to calculate all the odds of any possible combination coming up in a shopping cart?
