Single Day Booking

I am trying to set up a calendar for hot air balloon rides. My goal is to be able to set up 2 different balloons that fly just one time a day.

My issue is that when a flight is booked that balloon or day should be marked as booked. I have been working with the settings in the Theme area and just can not get the calendar to show a single day as booked. It keeps showing the night as booked and not the day. How do I fix this? I remember having this issue before but am not sure how I fixed it. This is not a check in or check out type of booking. It is a one time a day booking so when a reservation is made the entire day should be blocked off.
