Single Product Page 301 Redirects: recommended & SEO friendly?

Dear team woocommerce,

I want to give each of my products an individual product page design.
It’s easier for me to design the product page with a “normal” WordPress page and not with the woocommerce product page.
I have all I need to get this running.
I will do the 301 redirects with the plugin Redirection.

My questions:
1) From your experience as the developer of woocommerce, are there any disadvantages for me when I do this? Worse SEO, for example or anything I did not think of?

2) I did read a forum post where the woocommerce team stated that it wasn’t wise to mess with the product permalinks? (Unfortunately I didn’t find the post in my bookmarks). So, when doing these redirects, normal procedure would be to link the individual product pages to the category structure “product”, right? Like:
mysite.com/product/singleproductpageA?

Or can I also set up different product categories now like:
mysite.com/product_categoryA/singleproductpageA
mysite.com/product_categoryA/singleproductpageA2
mysite.com/product_categoryB/singleproductpageB
