Thanks for reaching out @sp2jtc. After checking your site I can confirm that Google Analytics is firing as expected. See this screenshot taken from the tagassistant.google.com service, which you can check yourself.
What I suspect is happening, is that you are either checking for your own site visit, when the default visit in Site Kit is to not include logged in traffic.
I can also see that you have consent mode enabled within Site Kit, and it may be a case that you don’t have your consent mode plugin configured correctly. I can see it’s defaulting to consent not granted in my case (based in the EEU).
With regards to AdSense, you also have a privacy popup separate to your third party consent popup. Ads are appearing when I consent, so there are no issues here. See this example. They only appear when I consent with your AdSense privacy popup. You may wish to combine your AdSense popup with your third party cookie popup.
