Solon Theme header and title

So I have added in some Customer CSS to create a header on my page. I am very happy with it.

But with the theme, I have taken off the customized tag line and site title, as it writes over the picture.

i want to add a title to my page as in the tab it just comes up with –

I looked in the header.php file and found this code
<title><?php wp_title( ‘|’, true, ‘right’ ); ?></title>

am I able to delete everything in between the <title> </title> tags and put in my own words? or will that screw things up?

if not, can I add in some custom CSS to place a title of the page in as well.
