some form submissions are not showing up in logs

We only use Contact Form 7 for our leads to submit.
For our forms, leads would include at least one of these fields: Message, Volume, or Initial Product Inquired. We have 16 records since July 2022 that came in from the form but without data from any of these fields.
These records also do not show up in logs – one example is [email protected] which is in our Hubspot but not in the logs.
Can you share how records are created in our Hubspot from the form but not showing up in the logs?
