Stock control for limited edition, make on demand artwork

Woocommerce Version 3.8.1.

My daughter produces limited edition framed architectural sculptures in limited editions. I want an easy to maintain system to display these as product variations.

– Edition 1 – sold.
– Edition 2 – sold.
– Edition 3 – available in web store.
– Edition 4 – available in gallery. (Enquire for details.)
– Edition 5 – available on backorder. (I haven’t made it yet!)
– Edition 6 – available on backorder. (I haven’t made it yet!)

How do I differentiate between variations that have been sold and variations that haven’t been made yet?
