Should be possible using the Professional extension by enable the “Keep PDF on server” option under the document settings.

I actually do not want to keep this on the server. I just want it to be deleted once it is sent to the customer.

Those attachments should be cleaned after some days, depending on your current setting under WooCommerce > PDF Invoices > Status > Enable automatic cleanup.
