Stripe Description and Statement Descriptor

Hello,
I’m hoping to get some help overriding the default Statement Descriptor and Description that goes into Stripe. The statement descriptor I have set under Stripe settings, and the description that feeds into Stripe seems to just be the site name and order number. How can I override these to feed in other data (such as product that was ordered, etc.).
I found this
wc_stripe_descriptionhook in the docs, but not 100% sure on how to create the function. Also I couldn’t find a hook for the statement descriptor.Any help please? Thank you.

Statement Descriptionsetting in the Stripe settings underWooCommerce > Settings > Payments > Stripehere:
Link to image: https://d.pr/i/OhdRXZIs for what shows up on a customer’s bank statements for the transaction when they purchase from your store. It is not setup to feed into your Stripe.com dashboard.
