Subscribing via email subject line

I want to use this plugin with a newsletter service in which users are subscribed by sending an email to the newsletter service with the subscriber’s email address in the subject line of the email.
Can the plugin be configured to do this?
Additionally, do your servers log any of the information transmitted via the plugin?
