Swap contact form for email address

Hi, I found this plugin yesterday after much trial and error with others, and it does nearly exactly what I need, thank you.

I’m in the middle of customising templates. I’ve managed to get most of what I need done but PHP is not my strongpoint and I can’t work out how to replace the single entry sidebar contact form with the email address as a link. I’m encoding all emails on the site and the client would prefer not to have the contact form. I’ve managed to remove the form but I can’t work out how to display the email address. Can you help?
