text box size and centering text

I was having a resource type site built for me,but my friend has become ill so i need to now finish it myself. I made a page to use as a template for subsequent animal(fish) profiles i was happy with,just pasting the same text into text boxes over and over. The bulk is a 2 column row,image,text,image,text and so on,it spaced out nicely,the text and images evenly spaced. But now editing the text that should be displayed beside each image some text blocks have more text some less,causing the images and text to be crammed together. Is it possible to have the text boxes all the same size regardless of content? with the text centered vertically,i.e. a gap at the top and bottom? this is what i had,almost evenly spaced,i was quite happy with it though i still have things to add
