[Theme: Mantra] How to specify post category for category page?

Seems like this would be an obvious inclusion in the theme documentation, but I cannot find it anywhere. How can I specify which category of posts are shown on a page using the “Category page with intro” template? I assume a custom field is used, but what field is used?
