Theme overriding

Is there a way that we can define a custom theme or override one of the existing ones?

I want something like Theme 21, but with extra information on the side. I’d really like to have the option to hook into the template so that I can add it, i.e. something like $outline .= apply_filters( 'sp_wpspro_xxx', .... ); right after the product rating, for example.
