The main difference is that the Appointment Hour Booking is services oriented, this mean that you can setup the services with their duration and block the selected service time interval. The capacity and price is defined for each service and the available times are calculated based in the service duration.
On the other hand the WP Time Slots Booking Form is time-slots oriented, you can define the available time-slots separately, the capacity and price structure can be ser for each time-slot and the duration isn’t relevant in this case to block the availability (the whole time-slot is blocked when the capacity is reached). It also has more options for accepting bookings for different groups (example: separate price structure for adults, children, etc…).
Both plugins have a similar interface, but cover different cases of use.
